Make sure you are viewing contacts in your Jabber client, and double-click on any roster members to open a conversation window.
You can also start a chat by selecting the chat activation icon, which resembles a blue circle with a speech bubble on it, which is available when you search for a contact, hover over their listing in your roster, or open a contact card by clicking on a person's avatar.
